As a GM, what is your role in terms of procurement?
A: In today’s scenario, the role of general manager in procurement is crucial and much more vast than before. Ensuring the right quality at the right price is the key for any good hotel or resort. From ingredients to linen, equipment to furniture there are many areas where general manager needs to get involved in every aspect of the business to ensure healthy financials for the stakeholders and great quality for the guest.
How closely do you work with the procurement team or purchase department for the same?
A: I work closely with the procurement team, which is not just to discuss the final costing, but understand requirements to enhance the experience for our guests and ensure quality purchases from various vendors. From ensuring economical yearly contracts for daily usage items to managing cost during low season, right direction is requirement to ensure the team gets the right products to be served to guests.
Are all purchased at your hotel centralised or are their local options and variations considered?
A: We at Karma Lakelands source most of our daily & vegetables from our in house farms. Our team plans seasonal growth as per the chefs requirement thereby making our food more organic and fresh.
