Salt Lake City, UT [Nov. 7, 2024] – Radisson Salt Lake City Downtown is proud to announce the promotion of Josh Lokken to Executive Chef, where he will oversee all aspects of the hotel’s food and beverage program. Lokken’s leadership will span Copper Canyon Grill House & Tavern, in-room dining, the newly-opened Executive Club Lounge, banquets and events, and the soon-to-open 215 West Coffee, which will launch in early 2025. His promotion comes as the hotel completes a multi-million-dollar renovation, positioning itself as a key destination in the heart of downtown Salt Lake City’s revitalization.
Lokken brings over 12 years of culinary experience to his new role, having joined Radisson Salt Lake City Downtown in 2022 as sous chef. Previously, he served as executive sous chef for The SSA Group at the Denver Zoo, where he managed banquet production and led culinary teams. Known for his commitment to fresh ingredients and his ability to craft simple yet flavorful dishes, Lokken has been instrumental in elevating the dining experience at Radisson. His leadership and creativity make him the perfect fit to guide the hotel’s food and beverage program through this exciting new chapter.

At Copper Canyon Grill House & Tavern, Lokken will introduce seasonal menus highlighting regional ingredients from the Mountain West, with dishes like pan-fried trout in roasted beer muhammara and chicken kale-pesto pasta that balance bold flavors with simplicity. He also plans to refresh the hotel’s banquet and event menus, with creative, customizable options for gatherings of up to 450 guests. The Executive Club Lounge will feature expanded breakfast and evening small plates, while in-room dining will continue to prioritize convenience and quality. In early 2025, Lokken will oversee the launch of 215 West Coffee, a café featuring Starbucks coffee and artisanal grab-and-go items.
