Courtyard by Marriott Mumbai has appointed Biju Philips as the new executive chef. As Philips brings in over 15 years of experience as an enterprising chef, he aims to focus on ensuring the culinary basics are done right while elevating the F&B offerings at Courtyard. With the intention to give the guests something new to come back to every time they visit the Marriott property, the busy airport hotel strives to present the best of F&B offerings.

In a city like Mumbai that is always bustling and is home to some of the best hotels in the country, Courtyard by Marriott is located in a busy business district. Keeping this in mind, Chef Biju believes in using local ingredients to get the best seasonal flavours. A firm believer in always learning something new, he takes inspiration from different cuisines and cultures. One can trace his fascination with food back to early childhood. Native to Kerala and having grown up in Bhopal, this cultural transition gave him avenues to try the best of both South and North Indian delicacies.

After young Biju received his culinary and hospitality management degree from IHM Kerala, he yearned to learn more about flavours. He joined Grand Hyatt Mumbai and then Grand Hyatt Goa where he led the award winning restaurants of both the hotels. Prior to joining the Courtyard by Marriott Mumbai team, he was leading the culinary brigade as the Executive Chef at The Westin Chennai where he launched The Madras Kitchen Company. His secret to culinary success? He adds, “Local ingredients make the best dishes, when prepared with love and passion.”
