Our foundation for sustainability efforts lies in Serve 360’s Sustain Responsible Operations coordinate, which encompasses initiatives to reduce our global carbon, water, and waste footprints. “Serve Our World” is one of our core values and guides us in how we do business.
The senior leadership team at the hotel encourages a culture of resource sharing and collaboration. Regular training programs are conducted to create awareness, and all this is driven by our sustainability committee that is headed by Girish Gaikwad, Chief Earth Officer at JW Marriott Mumbai Juhu. “Environmental stewardship and sustainability are our topmost priorities and 2024 is a big year for an array of developments towards reducing our impact on climate. We are glad to introduce ARC – an emblematic embodiment of our values and commitment to sustainability. The key pillars of ARC are Aware, Regenerative, and Collaborative. It’s a framework of initiatives that drive us closer to our goal of becoming fully sustainable.”
Housekeeping / Laundry department: We recognize the significant impact that utilities and luxury amenities can have on the environment and as such we undertake a list of initiatives in line with our second pillar “Regenerative” and third pillar, “Collaborative”.
Terry and Linen Recycling: We’ve established a robust recycling program for terry and linen items, ensuring that these materials are reused or repurposed in partnership with expert organizations. We seek collaboration from our guests in reusing through engaging messaging.
Residential Bath Amenities: The installation of organic residential bath amenities reduces wastage and the soap that’s placed as per the preference of certain guests, is collected, and recycled into fresh detergent to be used by underprivileged children as a part of community hygiene initiative.
Green Décor and Dry Botanicals: To minimize our ecological footprint and preserve the flora, we are gradually including décor and botanicals created with natural elements and green plants which are more sustainable than cut florals. The terrariums and installations utilize elements like dry branches, ferns & succulents, mosses, stones, and highlight local authenticity of Mumbai.
Kitchen Waste Management:
Organic Waste Compost: The various departments in the hotel are regularly trained and sensitized to do their own bit for sustainable operations. Culinary department and F&B service have a huge role in ensuring the waste is segregated at source and then the engineering team takes over to recycle it into organic manure. The Food Waste Tracking and the Organic Waste Converter recycles 500 kg of wet waste daily to generate 40-50 Kgs of organic manure which is used in our landscape, JW Garden and supports local agricultural initiatives.
Sustainable Food Sourcing: We’ve implemented a comprehensive sustainable food sourcing program that encompasses seafood to preserve endangered species and support local community of fishermen, cage-free eggs, greens sourced from local farmers and growing our own herbs at JW garden and hydroponic garden. By prioritizing local and responsibly sourced ingredients, we reduce transportation emissions and support local communities.
Eliminating Single-Use Plastics:
Single-Use Plastics Reduction: We’ve implemented a phased approach to eliminate single-use plastics from our operations, replacing them with eco-friendly alternatives wherever possible. This includes transitioning to biodegradable or reusable alternatives for items such as straws, cutlery, and packaging materials. We are also introducing drinking basins in our newly renovated banquet spaces and atmospheric water generators (AWG) in executive spaces. The glass bottling plant is in the process of being operational and we will soon be using only glass bottles across the hotel.
Water Recycling and Renewable Energy:
STP Water Recycling: Advanced tech is used to recycle at least 150 KL of grey water and stored in large capacity tanks to be further used for sanitation, gardening, and cooling towers. The process reduces our reliance on freshwater sources minimizing our environmental impact and lead to substantial financial savings. LEED certified fixtures and taps with aerators and pressure regulators lead to substantial reduction in water consumption.
Renewable Energy: 40 percent of the total power consumption in the hotel is sourced from wind energy and solar.
