Green Beans Salad Ingredients 500 Gm. green beans trimmed ½ Red Cabbage sliced into strips ¼ cup Fine sliced red onion Honey Mustard Dressing Ø 2 tablespoons Dijon mustard Ø 2 tablespoons extra-virgin olive oil 2 tablespoons apple cider
Green Beans Salad
Ingredients
- 500 Gm. green beans trimmed
- ½ Red Cabbage sliced into strips
- ¼ cup Fine sliced red onion Honey Mustard Dressing Ø 2 tablespoons Dijon mustard Ø 2 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar or fresh lemon juice Ø 1 tablespoon honey
- 1 small garlic clove, grated or minced Ø ¼ teaspoon sea salt, more to taste Ø Freshly ground black pepper For Garnish
- 60 Gm. goat cheese
- 2 tablespoons chopped walnuts
- 2 tablespoons sliced almonds
- ¼ cup Basil
- Sea Salt
Method
- Bring a large pot of salted water to a boil and set a bowl of ice water nearby. Drop the green beans into the boiling water and blanch for 2 minutes. Remove the beans and immediately immerse them in the ice water long enough to cool completely for about 15 seconds. Drain and place on paper towels to dry.
- Transfer the beans to a bowl and toss with the Red Cabbage, onion, and a few spoonful of the dressing.
- Arrange on a platter and top with small dollops of goat cheese, walnuts, almonds, and Basil. Drizzle with more dressing, season to taste with salt, and serve
Method for Dressing
- In a small bowl, whisk together the mustard, olive oil, vinegar, honey, garlic, salt, and pepper.
