He further reiterated that “In each hotel of AHS, a Hygiene Champion is appointed who ensures Support and co-ordination of the Hygiene Manual, promotes a proactive food safety culture, takes into account new legal requirements and recognized changes in food safety practices, discusses audit results from both internal and external besides ensuring action plans are developed and followed through.”
AHS is guided by HACCP (Hazard Analysis Critical Control Points), that provides a safe, standardized and certified system which gives individual properties the ability to manage hazards and risks associated with purchasing, receiving, storage, preparation, cooking, cooling, reheating, food display, transportation (in-room dining) and washing up. The process includes a documented quality system audit on products delivered to the hotels by suppliers.
Service and Kitchen team right from the joining stage go through a detailed induction on Hygiene and food Safety, followed by regular refresher training which includes periodic assessments.
All deliveries of raw food in AHS Hotels undergo strict procedures that includes a temperature check up by thermometer. The food is rejected if rotten or stored at an improper temperature and all canned foods are quality checked for dents and leakages. There is a quote that states “If an egg is broken by an outside force, life ends.” But at AHS Hotels to maintain the quality of the eggs we go one notch further by ensuring that all eggs received are sanitized with Veggie & Fruit Wash Solution and the eggs are kept for 1- 2 minutes in a chlorine solution before rinsing under water. Cheese & Dairy Products (potentially hazardous foods) are also delivered in refrigerated vehicles that are maintained in a temperature of 5°C or below and its package is quality checked.
AHS packaging standards are also in place where the packaging for both chilled and frozen foods are checked for its good condition. Buffet Food comes with an attitude and we at AHS hotels ensure that all foods on display must have individual name cards to identify the type of food for the guest. Also, the foods on display on the buffet are NOT re-displayed at the next service or used in the staff canteen or executive lounge under any circumstances.
Guests love to experience our in-room dining service and we ensure that the food quality stays the best by covering it in steel covers. Condiments such as sauces, jams and butter are transported either in individually packed containers or poured onto a plate in the in-room dining kitchen and then covered and transported.
Lastly, making a drink in a bar is an art and to keep it alive and kicking, we at AHS ensure that we follow stringent rules that always includes fresh garnishes that are dated and stored in clean containers with lids. The bar employees when garnishing drinks use the Tongs or gloves and the bar cutting boards in green colour are sanitized on a regular basis.
